Shrimp tacos are fuss-free (when using cooked shrimp) and light, yet such a satisfying meal. You know the great thing about tacos? Versatility! Use your favorite meat (or not), vegetables and seasoning. We used cajun seasoning for this recipe instead of taco seasoning. If you want a more refreshing taste, a squeeze of lime & sea salt is all you need.
Cut 1 onion and 1 bell pepper into thin slices. Stir-fry them for a few minutes until a tender crisp. Discard juice. Add cooked shrimp and sprinkle cajun seasoning according to your liking. Stir and cook for a couple minutes more. Done! Serve with slices of avocados, chopped cucumbers and cilantro on a warm corn tortilla. Oh, and don’t forget the lime wedges for both tacos and margaritas.
We usually enjoy homemade margaritas but when pressed for time, our top choice is Cayman Jack. So far, it’s the best store-bought margaritas we have ever tried. Keep them chilled until you are ready to drink. Prepare a sea salt rimmed glass. No ice but a lime wedge. Cheers!
